Our cuisine celebrates the extraordinary terroir of Salento: the sun-drenched olive groves, the crystalline Adriatic waters teeming with seafood, the artisan cheesemakers who still produce caciocavallo podolico by ancient methods, the farmers who cultivate the ancient varieties of tomato and grain that have fed this peninsula for millennia. Every wedding menu is a journey through the authentic flavours of Puglia, designed in collaboration with the couple and crafted by our team of expert chefs using the freshest seasonal produce.

Signature Dishes of Salento

Begin with the aperitivo — a generous spread of Pugliese antipasti: creamy burrata with local cherry tomatoes, taralli seasoned with wild fennel seed, friselle soaked in extra-virgin olive oil and crowned with ripe tomatoes and fresh oregano, paper-thin raw fish with citrus and sea herbs. Then the signature dish: polpo alla crosta riccioluta con caciocavallo podolico — octopus prepared with a curly-crust technique that creates a contrast of textures, served alongside a fondue of caciocavallo podolico, the rare and intensely flavoured cheese produced from the milk of Podolian cattle raised on the Murge plateau.

From the sea, Mediterranean prawns — gamberi di Gallipoli — prepared simply to honour their exceptional freshness: perhaps raw with lemon and Salentine olive oil, or lightly grilled over vine embers. The fish courses follow the seasons and the catch: ricci di mare (sea urchins), cozze pepate (peppered mussels in their black shells), triglie (red mullet) roasted whole with wild herbs. A vegetarian alternative of equal creativity is always available.

How We Think About Food

Farm to Table

Our Culinary Philosophy

We work with a carefully selected network of small local producers — fishermen from Porto Cesareo and Gallipoli, cheesemakers from the Murge plateau, organic olive growers from the Salento interior, and market gardeners from the Terra d'Otranto. Every ingredient arrives at our kitchen as close to its origin as possible. We do not use products that have travelled further than necessary. The integrity of Puglia's extraordinary food heritage is our guiding principle.

The Supply Chain

Local Producers

Our caciocavallo podolico comes from a small cooperative of farmers who still practice seasonal transhumance with their Podolian cattle. Our olive oil is stone-pressed from centuries-old trees in the groves above Santa Cesarea Terme. Our seafood is purchased at dawn directly from the fishing boats in the ports of Otranto and Castro. This short supply chain guarantees freshness and supports the traditional livelihoods of Salento's food community.

The wines of Puglia have undergone a renaissance in recent decades, producing bottles of international reputation from the indigenous Primitivo, Negroamaro, Susumaniello, and Fiano Minutolo grapes. Our sommelier curates a wine list that highlights the finest Salentine and Pugliese producers, from structured reds to the perfumed rosés and mineral whites that pair perfectly with seafood. A selection of Italian artisan spirits, local liqueurs (such as Limoncello di Lecce and mirto), and premium cocktails completes the beverage offering.
